Nothing says "fall is here" quite like a homemade apple pie using fresh apples from the orchard. With its satisfying and flaky crust that uses no dairy traditionally associated with pie dough, this apple pie - adapted by the 1440 Multiversity culinary team to be vegan and gluten-free - makes for a perfect sweet treat whether enjoying for dessert or sneaking a piece for breakfast.

Ingredients

Pie Dough Ingredients

  • 2 cups oat flour
  • 1 1/2 Tbsp. sugar
  • 1/2 tsp. salt
  • 1/2 cup + 2 Tbsp. Earth Balance or equivalent non-dairy butter
  • 3 Tbsp. water (cold)
 

Apple Pie Filling Ingredients

  • 3 cups baking apples; peeled, cored and thinly sliced
  • 2 tsp. fresh lemon juice
  • 3 cups water
  • 1/2 cup brown sugar, packed
  • 1/2 cup cane sugar
  • 1/4 cup corn starch
  • 1/2 tsp. cinnamon
  • 1/8 tsp. freshly ground nutmeg
  • 1 Tbsp. Earth Balance or equivalent non-dairy butter (optional for added richness)
 

Streusel Topping Ingredients

  • 1 cup gluten-free oats
  • 1 cup almond meal
  • 1/2 tsp. cinnamon
  • 1/4 cup brown sugar
  • 1/4 cup Earth Balance or equivalent non-dairy butter
  • 1/4 tsp. sea salt

Preparation Instructions

Pie Dough Instructions

  • Preheat oven to 325 degrees. Cut cold butter into cubes and then combine the flour, sugar and salt in a bowl. Using a fork or pastry cutter, cut butter into flour mixture, mix until crumbly. Add flour and sugar mixture to the cold water, mix until dough forms. Once the dough is mixed, and no flour remains to be incorporated, form dough into a ball, wrap in plastic and refrigerate for at least 30 minutes to allow the glutens to rest.
  • Roll dough out onto parchment paper or silicone baking mat to 1/4-inch thickness and transfer to pie tin, or gently pat pie dough into pie tin ensuring even distribution for proper baking. Par bake as soon as possible for 20 minutes.
 

Apple Pie Filling and Streusel Topping Instructions

  • Preheat oven to 350 degrees. Juice lemons and drizzle over cut apples. Place water, brown sugar, cane sugar, corn starch, cinnamon and nutmeg in a medium pot and bring to a simmer, stirring occasionally. Allow mixture to come up to a boil and cook for 1 minute or until thickened.
  • Add apples to the mixture, stirring to coat the apples with the sauce. Lower heat to medium-low and let cook for 10 minutes. Remove from heat and add vegan butter,; stir until melted and combined.
  • If using immediately, transfer to pie shell. If using later, let cool 15-20 minutes before transferring to containers to refrigerate/freeze.
  • Melt vegan butter and mix all ingredients together until well incorporated. Crumble streusel over apple pie and bake for 20-30 minutes or until streusel is golden brown.
