Faculty Bio

Jason Wrobel

Jason Wrobel (aka J-Wro) is a world-renowned leader in vegan cuisine and plant-based nutrition. For nearly 15 years, his sublime fusion of food and humor has helped people live more vibrant, healthy lives. He is author of the best-selling cookbook lifestyle guide Eaternity: More than 150 Deliciously Easy Vegan Recipes for a Long, Healthy, Satisfied, Joyful Life.

A favorite among celebrities like Woody Harrelson, Robin Wright, Sigourney Weaver, John C. Reilly, Flea, and Steve Buscemi, Jason focuses on whole foods, natural ingredients, and big flavors. He turns up the heat on plant-based superfoods, proven to increase longevity, and serves them up as mouthwatering culinary masterpieces.

Jason graduated from the Living Light Culinary Institute and apprenticed with the industry’s finest talents in New York City and Los Angeles. Jason’s Cooking Channel show, How to Live to 100, was the first prime-time, plant-based cooking series in television history, and has taught millions of people worldwide how to prepare easy and nutritious vegan dishes at home.

His popular YouTube channel, The J-Wro Show, showcases healthy recipes, lifestyle transformation tips, and conscious comedy skits. He also offers lifestyle coaching and nutritional support through My Healthy Hustle online courses and digital training products.

Ashley Koff, RD

Ashley Koff is your better-health enabler. Koff’s better-nutrition tools, tips, and support help you get and keep better health results powered by better nutrition. A practitioner first, Ashley is an award-winning nutrition expert, author, speaker, consultant, spokesperson, and advocate who regularly shares her Better Nutrition message with millions. She offers clients her Better Nutrition tools via the Better Nutrition membership.

Ashley is the author of two books and the Road Trip to Better Health program. She has an award-winning social media platform and is cohost of the podcast Take Out with Ashley and Robyn. Currently living in Washington, DC, Ashley is relearning to play the trumpet, enjoys boxing workouts, and loves getting outdoors with Rerun, her dog.
